Paris Eastside, the newsletter

Well, every good thing comes to an end.

Today's edition of the Paris Eastside newsletter is a goodbye letter...

As communications habits change I realize that at this point my newsletter doesn't bring you anything that I haven't already posted on the social networks where Paris Eastside is active, Instagram and Facebook.

Online cooking classes are live!

It has been a long time since my last newsletter, but a lot happened in the world since January!
I sincerely hope you are all faring as well as can be.

At Paris Eastside we have been busy.

Busy reflecting on the past 17 years of cooking classes we taught (in Paris where I started in April 2003, in Seattle, in Bellevue, and in a few other cities... those who hosted the remote classes will recognize themselves, thank you again!).
I can't believe how time flies...

Busy building a new offering of online cooking classes, for individuals (hint: now you can take my classes again, wherever you are in the world!), and also for remote teams that need some together fun time more than ever.

I also started to teach a few free classes to try to keep you busy cooking and happy, no matter what. Those are announced on our Facebook and Instagram pages (if you don't follow us yet it is time to start doing so).
Past classes are available on our YouTube channel, as well as IGTV channel.
 
And if you are struggling to find new ideas to feed your family, day after day, check out our recipes section: it is full of easy to make and delicious recipes that will keep everybody in your household healthy.

So don't wait, check the calendar of online classes and I hope to see you soon via Zoom!

Happy New Year!

As we are in the middle of the winter I wanted to send you some blue sky to wish you an extravagantly daring and successful year.
To celebrate the new year we made a few additions to our website, that I hope will help you find classes more easily. Check out our Calendar view that combines all of our classes with details on their availability on one screen. We also modified our Gift certificates interface and it should now be easier to use on your end (no changes on the redeeming process so for all the existing gift certificates there is absolutely no change).
On the new schedule you will find all the first quarter classes, and I plan to add the second quarter classes before the end of January.
And don't forget that this coming Monday January 6th is the day to make your Galette des rois, use our simple and delicious recipe to follow the French tradition.

Dinner classes are back!

Those who know me since a while might remember the fun dinner classes we used to co-host, Lacanche and me, in their showroom.
The showroom you knew has moved and is now fully operational in a gorgeous space in Snohomish. The kitchen there is amazing and features of course a beautiful Lacanche range that we will use to prepare together a delicious three courses dinner on January 23rd. Check out the schedule to book that very special evening (get to the month of January on the calendar to see the class).
Other new classes include a sauces class in the evening of November 17th, in time for you to learn new sauces to show off a bit at Thanksgiving dinner. That will turn out to be a light dinner class as I plan to provide a few things to enjoy our sauces right away.
And of course all of our Christmas classes are now online, including our annual French Christmas pastries class (December 14th), and a fun Christmas macarons class on December 15th (see the picture underneath).
And as always there is much more on the schedule.

It's back to school again: time to plan your fall pastry classes

After a nice and long summer the children are now back in school all over the world. That means that moms can start again planning more personal activities, alone or with some girlfriends. This fall why not learn how to make macarons? We are happy to offer two classes: one for classic macarons on October 17th and one for Halloween style macarons (yes, we will make some cute little black cats...) on October 26th. 
Pâte à choux seems to be  is turning heads in the United States: join us to learn how to master it so you can make your own éclairs, profiteroles, choux, religieuses, Paris Brest, Saint-Honorés and more. We have a few spots left in the October 19th class.
​And in the meantime why not use the September weekends to make large batches of ratatouille: it freezes really well and tastes so much better when made with summer veggies.

Happy Bastille day!

Happy Bastille day July is indeed a very special month for me.
It starts with American Independence day, continues with Bastille day, and right after that comes my birthday.

July and August schedules are online: time to plan some summer fun!

Will you be around Seattle this summer? This could well be the right time to schedule some fun cooking activities, alone, with friends or with your teenagers. The Paris Eastside summer schedule is online and features all of our pastry classes plus the Provisions class some of you were waiting for since a while. Please note that some classes are on a Sunday, most are on Saturdays and there is also a weekday macarons class in August. The full schedule is here.
The beginning of summer is also graduation time for many of the young people in our lives so don't forget that my microwave cookbook makes an excellent present for those leaving home for the first time. See a few inside pages underneath. Order here.

Time to plan your spring cooking classes and private events

The days are finally getting longer and it is time to plan some spring activities.
Whether it is classes to learn new cooking techniques, private events with friends or colleagues or new recipes to practice to make the most of the new ingredients that spring will bring us.
The classes lined up until the end of June include an Eclairs and pate a choux class (plus one in Salt Lake City in April), a French pies class, a Pastries from Brittany (Kouign Amann) class and a few macarons classes.
If you want to organize a private class (minimum 6 participants) you can also choose from a Wine and Cheese class (scrumptious), a Provisions class (pate, salmon rillettes and all sort of provisions that you get to take back home) and of course a three courses dinner class.

Are you snowed in? This is the opportunity to try new recipes...

The Pacific Northwest is in the middle of a very unusual winter: lots of sun and lots of snow (ok, lots of snow "for us"). For me it is the perfect opportunity to stay at home and bake. Did you know that many of the recipes I teach, and a few more, are available for download on this website?
On the picture a new Hazelnut and chocolate tart that made it to the recipes taught in my French Pies class (next one in May).

​We wish you a delicious and sparkling New Year.
We updated our schedule for the first quarter, so it is time to use those gift certificates you maybe received for Christmas, or to plan your next culinary activities.
The whole schedule is available online, and we also want to mention a Pastries from Brittany class in Salt Lake City on February 1rst (sold out, but you can still get on the wait list) and a soon to be announced class in Dallas in March.
For private classes (Team events, Bachelorettes, Wine and Cheese dinner classes and more) please email us and we’ll make sure to find a date that works for you.
And don’t forget to check our recipes page to find classic and less classic French recipes, always easy to make.
