You might wonder why French people eat so many crepes in February and March every year. There is of course an explanation:
France is mostly a Catholic country by tradition, and because of that historically lent has been very widely observed (did you see the movie "le Chocolat"? It gives you a very good idea of what could be a traditional rural village in France a few decades ago). During lent food is supposed to be very simple and eggs are not supposed to be eaten. This is why at the beginning of lent - Mardi Gras - as well as in the middle of it - Mi Careme - all the eggs that have been accumulated and that would not keep for until after Easter are used in desserts like Crepes.
And all the eggs laid after Mi Careme but before Easter are hard boiled and served as part of the Easter traditional spread.
